I thought I’d share my favorite gluten-free tortilla options. I use all three kinds depending on the occasion. I typically use the sprouted corn when I make enchiladas, the coconut/cassava for breakfast tacos or quesadillas, and the jicama tortillas during the Sugar Detox or when I’m trying to reduce carbs. You’ll usually find the sprouted corn tortillas in the freezer section at your grocery store (near the gluten-free stuff). The jicama tortillas are in the refrigerated produce section. The coconut/cassava tortillas have been a little harder for me to find, but I usually pick them up at Whole Foods when I’m in the big city!
